Best Grilled Cheese Sandwich

Ingredients

For the dough:

2 ½ cups all-purpose flour

1 tbsp sugar

1 tsp salt

2 tsp instant yeast

2 tbsp softened butter

¾ cup warm milk

¼ cup warm water

For the creamy cheese topping:

1 cup shredded mozzarella

½ cup shredded cheddar

2 tbsp mayonnaise

2 tbsp softened cream cheese

1 egg

Pinch of salt

  1. Make the dough
  2. In a bowl, mix flour, sugar, salt, and instant yeast.
  3. Add warm milk, warm water, and butter.
  4. Knead for 7–10 minutes until smooth and elastic.
  5. Cover and let rise for 1 hour or until doubled.
  6. Shape the buns
  7. Punch down the dough and divide into 8 equal balls.
  8. Place on a greased baking tray.
  9. Cover and let rise again for 30 minutes.
  10. Make the cheese topping
  11. Mix mozzarella, cheddar, mayonnaise, cream cheese, egg, and a little salt.
  12. Stir until creamy and spreadable.
  13. Assemble
  14. Spoon the cheese mixture generously over the top of each dough ball.
  15. Spread evenly to coat the surface.
  16. Bake

Bake in a preheated oven at 190°C (375°F) for 18–22 minutes, until golden and bubbly on top.
