Ingredients
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup butter (softened)
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup milk or yogurt
- ½ cup raisins
- ¼ cup chopped almonds (plus extra for topping)
👩🍳 Instructions
- Preheat oven to 180°C (350°F). Grease or line a loaf pan.
- Mix dry ingredients: flour, baking powder, baking soda, and salt.
- Cream butter & sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla.
- Combine: Add dry ingredients alternately with milk/yogurt.
- Fold in raisins and chopped almonds.
- Pour batter into the pan and sprinkle extra almonds on top.
- Bake for 40–50 minutes or until a toothpick comes out clean.
- Cool, slice, and serve.
🍰 Tips
- Soak raisins in warm water (or juice) for 10 minutes for extra softness.
- Add a drizzle of honey or syrup on top for a glossy finish.
