Almond Raisin Tea Cake (Soft & Buttery Loaf)

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter (softened)
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup milk or yogurt
  • ½ cup raisins
  • ¼ cup chopped almonds (plus extra for topping)

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F). Grease or line a loaf pan.
  2. Mix dry ingredients: flour, baking powder, baking soda, and salt.
  3. Cream butter & sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla.
  5. Combine: Add dry ingredients alternately with milk/yogurt.
  6. Fold in raisins and chopped almonds.
  7. Pour batter into the pan and sprinkle extra almonds on top.
  8. Bake for 40–50 minutes or until a toothpick comes out clean.
  9. Cool, slice, and serve.

🍰 Tips

  • Soak raisins in warm water (or juice) for 10 minutes for extra softness.
  • Add a drizzle of honey or syrup on top for a glossy finish.
  • Tastes even better the next day with tea or coffee ☕
