High-Protein Cottage Cheese Egg Bites

 

Ingredients (makes ~10–12 bites)

  • 6 large eggs
  • 1 cup cottage cheese (full-fat or low-fat)
  • ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • ½ cup diced veggies (bell peppers, spinach, onions, mushrooms)
  • ¼ cup cooked protein (optional: bacon, ham, turkey, or sausage)
  • Salt & pepper to taste
  • Optional: garlic powder, paprika, or chili flakes

🔪 Instructions

  1. Preheat oven
    • Set to 350°F (175°C).
    • Lightly grease a muffin tin or use silicone molds.
  2. Blend base
    • In a blender, mix eggs + cottage cheese until smooth.
      (This makes them fluffy and creamy!)
  3. Add fillings
    • Stir in shredded cheese, veggies, and protein.
    • Season with salt, pepper, and spices.
  4. Fill muffin cups
    • Pour mixture evenly into each cup (about ¾ full).
  5. Bake
    • Bake for 20–25 minutes until set in the center.
  6. Cool & serve
    • Let cool for a few minutes before removing.
