Creamy Garlic Parmesan Roasted Potatoes

Ingredients

For the potatoes:

  • 2 lbs (900g) baby Yukon gold or red potatoes, halved
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp paprika (optional)
  • ½ tsp dried thyme or Italian seasoning

For the creamy garlic parmesan sauce:

  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups milk (whole milk preferred)
  • ½ cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1–2 tbsp chopped fresh parsley
  • Optional: ¼ cup crispy bacon bits or sautéed onions for extra flavor

👩‍🍳 Instructions

1️⃣ Roast the Potatoes

  1. Preheat oven to 400°F (200°C).
  2. Toss halved potatoes with olive oil, salt, pepper, paprika, and thyme.
  3. Spread in a single layer in a greased baking dish.
  4. Roast for 25–30 minutes until just fork-tender (they will finish cooking in the sauce).

2️⃣ Make the Creamy Garlic Parmesan Sauce

  1. In a saucepan, melt butter over medium heat.
  2. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Whisk in flour and cook for 1 minute to form a roux.
  4. Slowly whisk in milk and cream. Cook, stirring constantly, until thickened (about 3–5 minutes).
  5. Stir in Parmesan cheese, salt, pepper, parsley, and optional bacon/onions.
  6. Simmer until smooth and creamy.

3️⃣ Combine & Bake

  1. Pour the creamy sauce evenly over the roasted potatoes.
  2. Gently stir to coat.
  3. Bake for another 15–20 minutes, until bubbly and golden.
  4. Optional: Broil 2–3 minutes for a lightly browned top.

  • Mozzarella on top for extra cheesiness
  • Red pepper flakes for heat
  • Fresh rosemary instead of thyme
  • A sprinkle of extra Parmesan before serving
