Ingredients
For the potatoes:
- 2 lbs (900g) baby Yukon gold or red potatoes, halved
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp paprika (optional)
- ½ tsp dried thyme or Italian seasoning
For the creamy garlic parmesan sauce:
- 3 tbsp butter
- 4 cloves garlic, minced
- 3 tbsp all-purpose flour
- 2 cups milk (whole milk preferred)
- ½ cup heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 1–2 tbsp chopped fresh parsley
- Optional: ¼ cup crispy bacon bits or sautéed onions for extra flavor
👩🍳 Instructions
1️⃣ Roast the Potatoes
- Preheat oven to 400°F (200°C).
- Toss halved potatoes with olive oil, salt, pepper, paprika, and thyme.
- Spread in a single layer in a greased baking dish.
- Roast for 25–30 minutes until just fork-tender (they will finish cooking in the sauce).
2️⃣ Make the Creamy Garlic Parmesan Sauce
- In a saucepan, melt butter over medium heat.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Whisk in flour and cook for 1 minute to form a roux.
- Slowly whisk in milk and cream. Cook, stirring constantly, until thickened (about 3–5 minutes).
- Stir in Parmesan cheese, salt, pepper, parsley, and optional bacon/onions.
- Simmer until smooth and creamy.
3️⃣ Combine & Bake
- Pour the creamy sauce evenly over the roasted potatoes.
- Gently stir to coat.
- Bake for another 15–20 minutes, until bubbly and golden.
- Optional: Broil 2–3 minutes for a lightly browned top.
